- 2 sweet potatoes
- 1 tbsp olive oil
- 20 0z nitrate free sausage (I found mine at The Wild Ramp. It is the best!)
- 1 tsp sea salt
- 1 tsp black pepper
- Pour olive oil into pan, and begin to warm at medium heat.
- Add the sausage to the pan along with a pinch of sea salt and black pepper. While the sausage begins to brown, dice your sweet potato into 1 by 1 inch pieces and mix in with the sausage. You may want to add more salt and black pepper to taste.
- Cover pan with lid for 10 minutes, stirring every few. Next, you will continue to cook it uncovered for another 5-10 minutes. The sweet potato and meat will be crisp.
